If there’s one thing Italy is famous for, it’s food. Pizza from Napoli. Arancini from Sicily. And Ragu Di Carne from Bologna (or Bolognese as we like to call it). Tuscany is integral to Italian cuisine with fresh local ingredients from the green rolling valleys and vineyards surrounding Florence.

But where are the best places to eat in Florence? With international food outlets, gourmet sandwich shops, and street food it’s not easy to choose. This city has it all. But if you want to know the best food to try in Florence, look no further. Here is the insider guide to the best city for foodies in Italy.

Why is Tuscan food special?

The Tuscan region is famous for three things; olive oil, wine and truffles. It’s a vast fertile region full of vineyards, cypress trees and perfect Mediterranean weather. Tuscan food is also well known for it’s game such as wild boar, hares and pheasants. The verdant region is home to one of Italy’s most famous exports, Chianti. Made from Sangiovese grapes, Brunello di Montalcino, Barolo and Barbaresco make up the “Three Big B’s” of Italian wine.

Tripe or “Trippai” is a staple of local Tuscan cuisine, often sold from street stalls across the city. But not all dishes require such a strong stomach. Thick vegetable soup called Ribollita is a classic dish that many locals eat in Florence. But the most famous dish is Bistecca Alla Fiorentina. A huge T-bone from the local Chianina cattle, often served rare and cut into strips.

Another must eat food in Florence is  Pappardelle Al Cinghiale, broad ribbons of pasta with a wild boar or hare sauce. For something lighter try Crostini, crusty toasts topped with olive paste or chicken liver pâté. Want something more hearty? Try Pappa Al Pomodoro, a thick, soup-like mix of bread, basil and tomatoes.
